Good restaurants in the Vancouver area. For any type of food.?

Any type of food and any price range. We have eaten at all the norms, Cactus Club, Milstones, Boathouse etc, we really like Hy's steakhouse, Gotham, and Capones Restaurant and J Club, but would like somewhere new to go. Where do you recommend and why?
